Noodle Kugel

Ingredients:

  • 1/2 cup dried apricots
  • 1 lb wide noodles
  • 1/2 lb melted butter
  • 1 pt cottage cheese
  • 1 pt sour cream
  • 4 eggs, slightly beaten
  • 1 cup sugar
  • 1 tsp vanilla

Finely dice apricots, and place in a bowl with boiling water. Let rehydrate while you prep the kugel

Preheat oven to 350. Cook noodles until al dente and drain

Combine all ingredients in a 9 by 13 pan, eggs last. Bake for 1 hour
