Apple, Manchego, and Chive Salad

Ingredients:

  • 1 firm, tart apple
  • A bit of lemon juice
  • 1 ounce Manchego cheese
  • 1 tablespoons chopped chives
  • A drizzle of olive oil
  • 1 pinch kosher salt

Cut the apples into matchsticks. Toss with a bit of lemon juice. Cut the cheese into very thin matchsticks. Thinly slice the chives.

Toss all ingredients with olive oil and salt. Serve immediately.
