Smores Cookies


  • 1 cup (5 ounces) all purpose flour
  • 3/4 cup graham cracker crumbs (from about 4 sheets graham crackers)
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 8 tablespoons unsalted butter, at room temperature
  • 1/4 cup sugar
  • 1/4 cup brown sugar
  • 1/2 teaspoon vanilla
  • 1 egg
  • 1 cup mini marshmallows
  • 1 cup coarsly chopped milk chocolate, preferably Hershey’s

Preheat oven to 350°F. Line two baking sheets with parchment paper. In a medium bowl, whisk together flour, graham crumbs, baking soda, and salt; set aside.

In a large bowl, beat together butter, sugar, and brown sugar a handheld electric mixer until fluffy, 3 minutes. Beat in vanilla and egg. Add dry ingredients to bowl and beat just until dough comes together.

Use a rubber spatula to fold in marshmallows and chocolate. Drop dough by the rounded tablespoon onto prepared baking sheets. Bake cookies until golden, about 12 minutes. Let cool 3 minutes then transfer to a wire rack to finish cooling.
