- 1/2 cup finely diced mozzarella
- 1 tbsp balsamic vinegar
- 1 tsp olive oil
- 1 clove of garlic, minced
- 1/2 tsp dried herbs (thyme, oregano, etc.)
- 10-15 cherry tomatoes
- 1/4 cup basil, cut into thin ribbons
Combine mozzarella, vinegar, oil, garlic and herbs and let marinate at least one hour, up to overnight. Cut the tops off of the cherry tomatoes and a very small amount of the bottom so that they can stand up. Cut out the seeds and core. Stuff with the mozzarella mixture and top with basil.
