Herbed Baked Eggs

Ingredients:

  • 1/4 tsp minced garlic
  • 1 tsp dried herbs- thyme, rosemary, oregano, red pepper, etc.
  • 1 tbsp freshly grated Parmesan
  • 2 eggs
  • 1 tbsp heavy cream
  • 1/2 tbsp unsalted butter
  • salt and pepper

Preheat the broiler for 5 minutes, and place the oven rack 6 inches below the heat. Combine the garlic, herbs, and Parmesan, and set aside.

Carefully crack 2 eggs into a small bowls or teacups without breaking the yolks.

Place a ramekin on a baking sheet. Add cream and butter, and place under the broiler for about 3 minutes, until hot and bubbly.

Quickly, but carefully, pour eggs into the ramekin and sprinkle evenly with the herb mixture, then sprinkle liberally with salt and pepper. Place back under the broiler for 6 to 7 minutes, until the whites of the eggs are puffy and golden brown. The eggs will continue to cook after you take them out of the oven. Allow to set for 60 seconds, and serve with hot toasted bread if desired
