Lentil Tacos


  • 1/2 cups brown lentils
  • 1/3 cup corn kernels
  • 1/4 of a red onion
  • 1 cloves garlic
  • 1 tablespoon olive oil
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon paprika
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon oregano
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon red pepper flakes
  • tortillas
  • toppings of your choice

In a medium sauce pan, bring 1 1/2 cups salted water to a boil. Add lentils, cover, and reduce heat. Simmer covered for about 20 to 25 minutes, until most of the water has been absorbed

Finely dice a onion and garlic. Heat olive oil in a skillet; add onion, corn, and spices, and sauté for about 3 minutes. Add the garlic and sauté for about 1 minute more.

Turn off the heat and add the lentils. Stir and add to warmed tortillas.
