- Pizza dough (for 1 large pizza)
- 1/2 large sweet potato, thinly sliced, about 1/4 inch thick
- 1/4 red onion, sliced
- 1 1/2 tsp olive oil, divided
- Salt and pepper
- 1/2 cup mozzarella cheese
- 1/4 cup parmesan cheese
- 3/4 cup chopped kale
- 1 tablespoon balsamic vinegar
- 1 teaspoon, freshly chopped rosemary
- 1/2 tsp red pepper flakes
Place pizza stone in an unheated oven. Preheat the oven to 400 degrees F. Place the sweet potato slices in a bowl and toss with 1/2 tsp of olive oil and salt and pepper to taste. Place on a large baking sheet and bake for about 20 minutes, or until the sweet potatoes are soft and tender. Make sure you turn them once during the 20 minutes. Remove from oven and let cool while you prepare the pizza
Turn the oven to 450 degrees.Toss the kale with balsamic vinegar and set up toppings nearby for quick assembly. On a lightly floured surface, flatten and stretch the pizza dough. Place it on a lightly floured pizza peel. Lightly brush the dough with the remaining teaspoon of olive oil. Top with sweet potato slices, kale, red onion, rosemary, red pepper, and cheese.
Place the pizza in the oven-directly on the pizza stone. Bake for 10-15 minutes or until pizza crust is golden and cheese is melted. Remove from oven and let cool for a few minutes before slicing.
