Spaghetti a la Carbonara


  • 1 tbsp olive oil
  • 3 slices bacon, finely diced
  • 1 tsp salt
  • ½ pound spaghetti
  • 2 large eggs, lightly beaten
  • 1/3 cup grated pecorino cheese plus more for topping
  • Ground black pepper to taste

Heat olive oil in a large skillet over medium-high heat. Add bacon and cook, stirring, until crispy. Meanwhile bring water and salt to a boil, add and cook spaghetti

Reserve 1/3 cup of the pasta cooking water and combine with eggs and 1/3 cup cheese. Drain the pasta and add it while very hot to the skillet cook for a few minutes and then turn the heat off

Add egg mixture and toss over. Season with pepper and top with pecorino
