Lemon Squares


  • 1 cups all purpose flour, divided
  • 1/8 tsp salt
  • 2 tbsp powdered sugar
  • 6 tbsp butter, cut into small pieces
  • 3 large eggs
  • 1 cup sugar
  • Zest of 1 lemon, very careful not to remove pith
  • ½  cup fresh lemon juice

Preheat oven to 325.

In a medium bowl, stir together ¾ cups flour, salt, and powdered sugar with a pastry blender. Sprinkle butter on top and cut in until crumbly dough forms. Press the mixture into the bottom of an 8 by 8  baking pan. Bake for 20 to 30 minutes, until golden brown all over. Set aside and reduce oven temperature to 300 degrees

Whisk together eggs and sugar until well combined. Stir in lemon zest and juice. Sift remaining flour over the stop and stir in until well blended and smooth. Pour batter over the baked crust. Bake until set, about 35 minutes
